10 Recipes for Summer Lunches

The summer period may well be synonymous with vacations, but it’s fairly rare that we get to stretch them all the way to the end of September. For people who have to go back to work, there are plenty of ideas for lunches and snacks. The proof is in the pudding; check out these 10 perfect summer recipes.

1. Mortadella Sandwiches with Pistachio Mayonnaise

Sandwiches may be a staple of school-year lunches, but they’re just as ideal for any lunch, at any other time of year. This variation is highlighted by the addition of homemade pistachio mayo and generous garnishes, including lemon-stuffed olives, which bring a welcome salty lemony saltiness to the dish.

2. Tonnato Niçoise Salad

When you want to change things up from sandwiches, fresh salads are also an excellent lunch option. One of the advantages of this ultra flavourful recipe is that you can make it in advance. Assemble all the ingredients in a glass jar that displays them in a most appetizing way. Practical for the office or for picnicking in the park.

3. Smoked Meat Banh Mi Sandwich

This version of the banh mi, the famous Vietnamese baguette sandwich, gives the starring role to smoked meat. Spread some mayonnaise and liver pâté on one side of the bread and mustard on the other. Pickled vegetables, chili pepper and cilantro bring the finishing touches, making this sandwich a lunchtime delight.

4. Smoked Salmon Greek Yogurt Dip

This Mediterranean-inspired snack is ideal for hot and sunny summer days. This Greek yogurt dip gets a flavour boost from horseradish, dill, garlic and, of course, smoked salmon! The mixture also includes marinated shallots, some of which are set aside for a garnish. Enjoy it with crudités and hard-boiled eggs.

5. Open-Faced Sandwiches with Radish Butter and Ham

This recipe offers a variation on the classic tandem of ham and radishes, featuring a radish butter enhanced with a hint of horseradish. Spread the mixture on a baguette cut in half lengthwise and garnish with ham and radish slices. A wonderfully sharp summer lunch!

6. Tostadas de pescado (Fish Tostadas)

A meal that takes no time to make is always a winner at lunchtime. This classic Mexican dish features baked haddock fillets with a salsa verde topping. Broken into large flakes, the fish tops tostadas with sour cream and a refreshing salad of marinated onion, lettuce, cucumber and cilantro.

7. Corn Muffins

These muffins are an excellent way of using up corn leftovers following a corn roast. Add the kernels to the dough, which includes a mix of flours, extra-sharp cheddar cheese and chives. This deliciously salty snack is not only a great no-waste recipe, but is also equally loved by kids and adults.

8. Cold Vermicelli with Shrimp

Rice vermicelli, curry-seasoned shrimp and colourful vegetables are the stars of this yummy cold noodle salad. Fresh herbs and a sweet and sour dressing bring out the flavours. A tasty dish that’s super easy to put together, ideally suited to be eaten for lunch, on the road or at a picnic.

9. Chicken and Quinoa Salad Bowls

Many recipes feature leftover chicken, but in the warm season, salads like this one offer the most refreshing options. In this case, quinoa, Gouda, dried apricots and pecans make it a most satisfying lunch.

10. Cantaloupe Salsa

Perfectly ripe and juicy cantaloupe is among summer’s most appreciated little pleasures. In season, this local fruit makes a marvellous salsa. The tiny fruity dice add sweetness to the basic mixture of tomatoes and cucumber. Delicious with chips for a picnic or just as a snack to end your day on a happy note.
