- In a bowl, whisk together all the ingredients. Season with salt and pepper. Set aside.
- Prepare a large bowl of ice water. Boil the shrimp in salted water for about 2 minutes. Drop them into the ice water to stop the cooking. Drain.
- In a bowl, combine the shrimp and the remaining ingredients. Toss with the dressing. Adjust the seasoning.
Can be made a day ahead. If possible, finish just before serving.
