  1. With the rack in the middle position, preheat the oven to 190 °C (375 °F).

  1. In a skillet, brown the carrots in the butter for about 10 minutes or until tender. Season with salt and pepper. Add the honey and caramelize for 2 minutes. Add the balsamic vinegar and pour into a 30 x 23-cm (12 x 9-inch) baking dish.


  1. In a skillet, brown the shallots in 15 ml (1 tablespoon) of olive oil. Remove from the heat and let cool.
  2. In a food processor, process the bread into crumbs.
  3. In a bowl, combine the breadcrumbs, cooled shallots, garlic, graham cracker crumbs, remaining olive oil and spices. Season with salt and pepper.
  4. Season the fish with salt and pepper and place over the carrots. Press the spice mixture onto the fish and bake for about 30 minutes or until the fish flakes easily with fork; the cooking time will vary depending on the thickness of the fish.


For this recipe, it is preferable to use a whole white fish fillet, halibut, for example, is ideal. Alternatively, you can use grouper, Chilean sea bass, or even salmon.
