Chewy Butterscotch

  1. Line a 23 x 13-cm (9 x 5-inch) pan with a sheet of parchment paper and butter thoroughly.
  2. In a saucepan, combine all the ingredients except for the vanilla. Bring to a boil and simmer gently until a candy thermometer reads 121 °C (255 °F). Remove from the heat and stir in the vanilla.
  3. Pour into the prepared pan and chill for about 3 hours. Unmould and cut into squares.
  4. Store in an airtight container layered between sheets of parchment paper. 


In hot weather, keep the Butterscotch in the refrigerator to prevent any softening.
