Spice Mix

  1. In a bowl, combine all the ingredients. Set aside.
  2. Place a cast iron skillet on the grill and preheat, setting the burners on high (or over high heat on the stove with good ventilation). Allow it to warm up for 15 minutes.

Fish

  1. Pat the fish dry with paper towels. Coat the fish with melted butter and dredge in the spices.
  2. Place 2 fillets at a time in the skillet. After 1 to 2 minutes, flip the fillets to blacken the other side until the fish is cooked.
  3. Serve with lemon wedges.
