Wild Rice and Peach Salad

Rice

  1. In a saucepan, bring the wild rice and 1 litre (4 cups) of salted water to a boil. Cover and simmer over medium heat for about 1 hour. Drain. Place in a bowl and let cool.
  2. In the meantime, in another saucepan, bring the jasmine rice and 250 ml (1 cup) of salted water to a boil. Stir, cover, reduce the heat to low and cook for 15 to 20 minutes. Remove from the heat, place in a bowl and let cool.

Dressing

  1. In a bowl, combine all the ingredients with a whisk. Season with salt and pepper.

Garnish

  1. In a bowl, combine the wild rice and jasmine rice, peaches, green onion, bell pepper, and dressing. Season with salt and pepper. Serve.

Note

To make it easier to peel peaches, place them in boiling water for 30 seconds to 1 minute, depending on the fruit ripeness. Place them immediately in ice cold water to easily peel them with your fingers.
