Green Salad with Crispy Pancetta

  1. With the rack in the middle position, preheat the oven to 200 °C (400 °F). Line a baking sheet with parchment paper.
  2. Place the slices of pancetta on the baking sheet. Bake for about 15 minutes or until crispy. Drain on paper towels. Set aside.


  1. In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.
  2. At the last minute, combine the lettuce with the dressing, to taste. Adjust the seasoning. Garnish with the slices of crispy pancetta.
