- In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.
- Stuff the inside of the chicken with the stuffing. With butcher twine, tie the legs of the chicken.
- In a large saucepan, bring the juice and water to a boil with the chicken. Add water if needed, the chicken should be completely covered with liquid. Season with salt and pepper. Cover and simmer gently for about 45 minutes. Add the vegetables and cook gently, covered, for about 1 hour and 30 minutes. Adjust the seasoning of the broth.
- Place the chicken in a shallow serving dish. Place the vegetables around it and pour a little broth. Serve family-style with a small pitcher of broth.
Sometimes when buying a chicken, there are giblets inside. Chop them and add them to the stuffing.
