- Preheat the grill, setting the burners on medium.
- In a bowl, combine all the ingredients. Set aside.
- For each papillote, layer two sheets of aluminum foil. Place the bok choy at the bottom of the papillote. Layer with the tofu and top with the fish and zucchini.
- Fold the foil toward the centre. Drizzle with the marinade. Season with pepper. Close to seal. Grill for about 15 minutes.
Sambal oelek is an Asian chili sauce.
If you can’t find the cute baby bok choy that you see at the grocery store but usually don’t dare buying for lack of ideas, use sliced Napa cabbage (Chinese cabbage).
