  1. In a bowl, combine all the ingredients with a whisk. Season with salt and pepper. Set aside.

Panzanella

  1. Soak the onion in cold water for 5 minutes to mellow its taste. Drain. Set aside.
  2. In a large non-stick skillet over medium heat, brown the cornbread cubes in the butter. Let cool on a plate.
  3. In a large bowl, toss the remaining ingredients with the cornbread and dressing. Adjust the seasoning. Serve immediately with grilled meat or chicken.
