Chicken and Peanut Soba Noodles

  1. In a saucepan, combine all the ingredients. Bring to boil while stirring and simmer gently for about 15 minutes. Set aside.


  1. In a pot of salted boiling water, cook the noodles for 4 minutes. Add the asparagus and continue cooking for 2 minutes. Drain and lightly oil the noodles. Set aside.
  2. In a wok or large skillet, fry half the chicken and bell pepper in half the oil over high heat. Season with salt and pepper. Set aside. Repeat with the remaining chicken, oil and pepper.
  3. Return the chicken and bell pepper to the skillet. Add the sauce and noodles. Toss to combine.
  4. Serve into bowls. Garnish with peanuts and cucumber.


Soba noodles are made of buckwheat. They are sold in grocery stores in the Asian or natural food aisle.
