How to Make the Best Caesar Salad

A Caesar salad is delicious on its own, but it’s even better with creamy homemade dressing, golden croutons, and crisp romaine lettuce. Here are seven tips for making this classic successfully and achieving the best-ever Caesar salad.

1. Capers

These briny little buttons are what distinguish our best Caesar salad from our classic version. Fried in oil, they explode and bring a crispy and enjoyable texture when you bite into them. Be sure to set a few aside to chop into the dressing.

2. Croutons

You want small bread cubes that are perfectly golden and crunchy. You therefore need to cook them twice: first in a skillet to brown the exterior and then in the oven on a sheet pan to properly cook the interior.

3. Garlic

It’s an essential ingredient, but don’t overuse it in case it steals the show and overwhelms your taste buds. You only need a touch of garlic: 1/8 of a teaspoon (0.5 ml).

4. Parmesan

For a more gourmet look, opt for finely grated cheese everywhere, but also large curls that’ll be a joy to bite into!

5. Oils

To ensure your dressing has a good balance of flavour, go for equal parts olive oil, for its rich taste, and vegetable oil, for its lightness.

6. Lettuce

Romaine hearts are the perfect choice for three reasons: 

  1. their crunchy leaves
  2. they’re low in bitterness
  3. they can withstand the dressing much better than the dark green outer leaves.

For a more rustic look, tear the lettuce by hand at an angle, from each side to the centre.

7. Egg yolks

The Caesar dressing requires two yolks, for a better hold and the perfect level of creaminess.
