5 Desserts to Make with Caramel

On the scale of our preferred sweets, caramel is probably at the top. (Just to let you know, Brigitte and Ricardo actually prefer it to chocolate!) It’s best when runny, smooth and rich. Synonymous with indulgence, it can take on many forms. Here are five desserts that’ll surely melt the hearts of caramel fans. Good by the spoonful, best in a dessert!

1. Mini Sticky Toffee Carrot Cakes

When you combine the taste of carrot cake with that of sticky toffee pudding, you can’t go wrong. This slightly dense cake is baked in a layer of caramel, creating a glaze around the batter. The sauce, poured right before serving, is made with butter, enhancing the caramel’s aroma and enriching the experience. Be sure to enjoy it with a glass of milk!

2. Caramel Doughnuts

What’s wonderful about doughnuts is the unlimited number of ways they can be filled. In this recipe, we opted for a denser dough, much like the one of Italian bomboloni, loaded with a smooth caramel cream. The joy doesn’t stop there, as each pastry is dipped in a dulce de leche glaze. Delightful!

3. Brown Sugar Angel Food Cake with Caramel, Crème Anglaise and Caramelized Bananas

A cross between a meringue and a genoise, this angel food cake with molasses and brown sugar base is wonderfully fluffy. Its success is due to whipping the egg whites and then delicately folding in the other ingredients. Serve this light cake with crème anglaise, a generous drizzle of caramel, crème brûlée-style caramelized bananas, and a glass of milk. Now who wants a second slice of cake?

4. Caramel and Peanut Tartlets

Fans of the caramel and nut pairing will find happiness with these tartlets featuring a golden, buttery crust. The peanut chantilly cream has a creamy mousseline-like texture, which complements the tart and its flowing caramel topping. Crown the treat with a roasted peanut tuile, which adds a lacy, crunchy effect.

5. Caramel and Coffee Tiramisu

You’re invited to discover this tiramisu recipe, which combines the flavours of coffee with caramel. Their light bitterness is tamed with the addition of some maple syrup.
