Veggies on the grill are an undeniable success, and grilled eggplant stuffed with chickpeas and vegetables takes them to a whole new level. A bit on the spicy side, the tahini-yogurt sauce brings needed coolness and you’ll find the sweet and sour pomegranate molasses simply addictive.
Tuesday: Chimichurri Salad with Grilled Vegetables
Isn’t this salad absolutely colourful? Corn and carrots are grilled to give you that perfect char, and then they’re tossed with romaine, avocado and a bright chimichurri sauce. And don’t forget the edible flowers! The best part is, you can also use the chimichurri as a marinade for any meat or other protein you’re grilling on the side.
Wednesday: Curried Cauliflower on the Grill with Coconut-Pomegranate Dressing
There are so many ways to enjoy cauliflower; yes, even at a barbecue! But instead of taking the usual cauliflower steak route, we cooked this veggie on the grill two ways: first in foil packets, then followed up directly on the grill. It’s charred to perfection, wonderfully spiced from the curry powder, and the coconut yogurt and accompanying topping round out the dish wonderfully.
Thursday: Warm Feta with Tomatoes and Olives
We know, a cold Greek salad on a hot day is the perfect side dish to grilled pork chops or steak. But how does a warm salad sound? Perfect for a backyard barbecue or at the campsite, you simply cook feta cheese in a cast iron skillet on the grill and then top with tomatoes, green peppers and olives, and add some roasted buckwheat for crunch. Successful summer achievement unlocked!

Nobody enjoys over- or under-cooked scallops, but when they’re cooked properly, they are a delicacy unlike any other. Here, the scallops are grilled to perfection, as are the zucchini and asparagus. Serve with a sweet and savoury mango salsa, and there is no better way to cap off your week.
