July 31 to August 4, 2023: What to Cook this Week

It may be vacation time for us, but not for the barbecue. Cooking in the open air is in the spotlight this week with a selection of 100% barbecue recipes that bring exotic flavours to your plates.

Monday: Grilled Tofu with Barbecue Sauce

The terrace is the happening place this week, even for your meatless Monday that features a vegetarian grilled dish. For this quick recipe, slice the tofu and grill it, coated in slightly spicy barbecue sauce. Serve the protein with grilled vegetables for an offer that will please the entire family.

Tuesday: Vietnamese Grilled Chicken Noodles

To make this recipe full of lovely Asian flavours, start with the Vietnamese nuoc cham sauce. Use this fragrant lemongrass mixture to marinate chicken thighs for at least 2 hours (the time for a dip in the pool or some other summer activity). Serve the grilled poultry with rice vermicelli, salad and a garnish of peanuts and green onions. Sitting down at the table to eat is like an invitation to travel to a faraway land.

Wednesday: Cajun Spice Salmon and Vegetables

This is one spicy week! Rub the salmon in Cajun spices, then grill it and serve the fish with blackened lemon halves and a duo of seasonal veggies: green beans and sliced ears of corn. A super sunny dish that’ll brighten up your terrace.

Thursday: Harissa Grilled Lamb with Grilled Vegetable Salad

Leg of lamb steaks, an often neglected cut, are perfect for the grill. They’re the stars of this Mediterranean-inspired dish. Save time by coating these tender pieces of meat in a speedy harissa marinade, an ingredient that’s also incorporated into the dressing for the salad. You’ll want the lamb to be cooked to medium rare doneness. Delicious with grilled vegetables and arugula.

Friday: Spicy Korean-Style Burgers with Kimchi, Quick Pickled Vegetables and Fried Eggs

Feel like having burgers to top off the week? The unanimous answer is a resounding “Yes!” The Korean-inspired toppings for this recipe, including cucumbers, onions marinated in rice vinegar and a fried egg with a runny yolk, will whet your appetite. Spice things up with store-bought kimchi, a touch of gochugaru, a Korean chili, and spicy mayo for even more heat.
