2 egg yolks
3 tbsp sugar
1/2 cup (115 g) unsalted butter
4 oz (115 g) dark chocolate, chopped
1/3 cup (50 g) unbleached all-purpose flour
Preparation
With the rack in the middle position, preheat the oven to 375°F (190°C). Generously butter and flour four ½-cup (125 ml) ramekins.
In a bowl, whisk together the eggs, egg yolks and sugar until light and fluffy.
In a pot over very low heat, melt the butter. Add the chocolate and stir until melted. Gently stir in the egg mixture. Fold in the flour. Spoon the batter into the prepared ramekins. Refrigerate at this point, if desired.
Bake for 10 minutes or for 13 minutes if the batter was refrigerated.
Unmould immediately onto plates. The centre of the cakes should be runny. Decorate with red berries and icing sugar, if desired.
