Preparation
- With the rack in the middle position, preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
- In a skillet over medium-high heat, cook the sausage meat in the butter, breaking it up with a wooden spoon. Remove from the heat and let cool.
- Divide the pizza dough into four balls. On a floured work surface, spread out each ball with your fingers to obtain circles 7 inches (18 cm) in diameter. Do not put flour on top of the dough.
- Spread the pizza sauce on each circle of dough, leaving a 1/2-inch (1.5 cm) border on the outside of the dough free of sauce. Add the cheese and sausage meat. Close up each pizza, bringing the bottom edge up and pinching it over to seal. Flip the pockets over and place them on a baking sheet.
- In a bowl, whisk the egg with the milk. Brush the pizza pockets with this mixture.
- Bake for 15 minutes or until the pizza pockets are nicely browned.
Note
You can add thinly sliced mushrooms or peppers to your pizza pockets. Instead of sausage, you can use ground beef, veal or chicken.
