Maple and Port Wine Sabayon

  1. In the top of a double boiler, off the heat, whisk together the egg yolks, maple syrup and port wine. Place over simmering water and whisk continuously over low heat for about 10 minutes or until the preparation has the texture soft meringue. Spoon into pretty bowls and serve with cookies or spoon over fresh fruit.
