Preparation
- With the rack in the middle position, preheat the oven to 180 °C (350 °F).
- In a bowl, combine the flour, spices and baking soda.
- In a saucepan, melt the butter, brown sugar, honey and molasses, stirring until the sugar has dissolved.
- Make a well in the centre of the dry ingredients and pour in the hot molasses mixture. Stir with a wooden spoon. Add the egg and stir until the dough is smooth and not sticky. Add a little flour if needed. Allow to cool.
- On a floured work surface, roll out the dough the same thickness of a pie crust. Cut cookies with a cookie cutter in the shape of a snowman, a star and/or other forms. Place the cookies on an ungreased baking sheet and bake for 8 to 10 minutes, depending on their size. Decorate with royal icing (recipe below) and candies, if desired.
Note
This icing is very simple. In a bowl, blend 180 ml (3/4 cup) of icing sugar with about 15 ml (1 tablespoon) of warm water, until smooth.
The mixed spices are sold as-is in the spice aisle. It is actually a mixture of ground ginger, allspice, cinnamon, coriander, bay leaves, cloves and black pepper.
