Haddock with Apricot Sauce

Ingredients

• • 1 1/2 lb (675 g) skinless haddock fillet, cut into 4 pieces
  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (125 ml) chicken broth
  • 1/4 cup (60 ml) apricot jam
  • 3 tablespoons (45 ml) soy sauce
  • 4 cups (1 litre) baby spinach
  • Salt and pepper
  • Toasted sesame seeds, to taste
  • Cilantro leaves (optional)
