Cheddar and Lime Butter
3 tablespoons (45 ml) butter, softened
1/3 cup (75 ml) cheddar, finely grated
The juice of 1 lime
Chicken patties
1 lb (454g) ground chicken
1 green onion, finely chopped
Salt and pepper
Toppings
4 hamburger buns
Arugula or lettuce of your choice
Avocado slices
Thin red onion slices
Dijon Mustard
Preparation
In a bowl, beat all the cheddar and lime butter ingredients until the lime juice is well incorporated. Place on a square of aluminum foil and shape a log the size of a toonie. Refrigerate.
Preheat the grill, setting the burners to high. Oil the grate.
When the butter is hard, cut it into four slices.
Form four patties and make a well in the centre with your thumb. Place a slice of butter.
Carefully close the patties over the butter so that when it melts, it won’t run out of the patties. Season with salt and pepper.
Grill the patties for 5 to 6 minutes per side until the meat is cooked. Do not press the patties during cooking. Let the patties rest for 1 to 2 minutes before serving.
Toast the buns. Assemble the burgers with the toppings of your choice.
