1/2 cup (125 ml) balsamic vinegar
2 tablespoons (30 ml) whole-grain mustard
2 tablespoons (30 ml) brown sugar
Salt and pepper
Skewers
1 1/2 lbs (675 g) boneless leg of lamb, cut into thirty-two 1-inch (2.5-cm) cubes
2 Cortland apples, cut into twenty-four 1-inch (2.5-cm) cubes

8 wooden skewers, soaked in water for 30 minutes
1/2 teaspoon (2.5 ml) fresh rosemary, chopped
Preparation
Marinade
In a saucepan, combine all the ingredients. Over medium heat, bring to boil, stirring frequently. Reduce by half over low heat for about 15 minutes. Season with salt and pepper. Set aside.
Preheat the grill to high temperature.
Skewers
Thread the lamb cubes onto the skewers, alternating with the apple cubes. Season with salt and pepper.
Grill the skewers for 1 to 2 minutes on all four sides. With a pastry brush, generously coat the skewers with the glaze while grilling. Just before serving, sprinkle with rosemary.
