BLUEBERRY SAUCE

  1. In a saucepan, combine 500 ml (2 cups) of blueberries, the water, sugar and ginger. Bring to a boil and simmer over medium heat for 8 minutes. Pour into a blender and purée until smooth. Add the remaining blueberries and let cool.

CROISSANTS FRENCH TOASTS

  1. In a bowl, combine the eggs, milk, maple syrup and salt.
  2. Cut the croissants in half lengthwise. Dip each piece in the egg mixture, turning to coat both sides.
  3. In a skillet, melt half the butter over medium heat and brown half of the croissants for 3 to 4 minutes per side. Keep warm. Repeat with the remaining butter and croissants.
  4. Place the croissants bottom in the four plates. Spoon the sauce over and cover the croissant tops.

Note

Eating croissants is a pure delight. But when they stay on the counter for a few days, they are definitely not as good. Like stale bread that turns into French Toast, this recipe is ideal to use stale croissants. You can prepare the sauce in advance: it will keep in refrigerator for up to one week. Warm the sauce up before spooning over your Croissant French Toast.
