Ingredients: 1/2 cup (125 ml) honey; 1/4 cup (60 ml) soy sauce; 2 tbsp (30 ml) apple cider vinegar; 1/4 tsp ground cinnamon; 2 duck breast halves, about 3/4 lb (340 g) each, completely trimmed of fat; 2 Golden Delicious apples, cored and each cut into 6 cubes; 8 wooden skewers, soaked in water for 30 minutes, or metal skewers; Salt and pepper

- 1/2 cup (125 ml) honey
- 1/4 cup (60 ml) soy sauce
- 2 tbsp (30 ml) apple cider vinegar

Brochettes
- 2 duck breast halves, about 3/4 lb (340 g) each, completely trimmed of fat
- 2 Golden Delicious apples, cored and each cut into 6 cubes

Preparation

Honey Glaze
- In a small saucepan, bring all the ingredients to a boil. Stir well and reduce for about 2 minutes. Set aside.
Brochettes
- Preheat the grill, setting burners to high. Oil the grate.
- Cut each duck breast into 8 cubes. Thread the duck onto the skewers, alternating with the apple cubes. Oil lightly. Season with salt and pepper.
- Reduce the heat to medium. Grill the skewers for 3 to 4 minutes on each side, or until the desired doneness, brushing them regularly with the honey glaze.
- Serve over mixed greens with roasted potatoes.
