Sortilège is a liqueur made with Canadian whiskey and maple syrup. It works well in deglazing meat and adding a little sweetness to a recipe. Served as a digestive, Sortilège also goes very well with praline-based desserts. You can replace it with a mixture of equal quantities of maple syrup and whiskey. To make this recipe without alcohol, use 1/4 cup (60 ml) water or chicken broth and 1 tbsp (15 ml) maple syrup instead of the Sortilège.
