Note from Ricardo If you want to serve this ham warm for brunch, proceed in two steps. The day before the brunch, cook the ham as indicated up to the first half of step 6, for 3 hours in the oven. The next morning, bake in the oven for 1 hour 30 minutes to 2 hours and then reduce the sauce for 30 minutes. You’ll need to plan for about 2 hours of cooking time the morning of the brunch.
