1/4 cup (60 ml) honey
1/4 cup (60 ml) soy sauce
2 tbsp (30 ml) toasted sesame oil
2 tbsp (30 ml) rice vinegar
1 tsp (5 ml) sambal oelek
Skewers
3/4 lb (350 g) firm tofu, cut into 24 approximately 1-inch (2.5 cm) cubes
24 small white mushrooms
2 yellow bell peppers, seeded and each cut into 12 cubes
1 green zucchini, cut into 24 half-rounds
1 green onion, thinly sliced
1 tbsp chopped cilantro
8 small (or 4 long) wooden skewers, soaked in water for 30 minutes, or metal skewers

Marinade
In a dish or a large sealable plastic bag, combine all the ingredients. Add the tofu, mushrooms, bell peppers and zucchini and toss to coat with the marinade. Cover the dish or seal the bag and refrigerate for 4 hours, or overnight.
Skewers
Preheat the grill, setting the burners to high. Oil the grate.
Thread the tofu alternately with the vegetables onto the skewers. Season with pepper. Reserve the marinade.
Reduce the heat to medium. Place the skewers on the grill and cook, turning often, for about 10 minutes, or until the tofu is well grilled.
In a saucepan over high heat, bring the reserved marinade to a boil. Serve as a sauce. Garnish the skewers with the green onion and the cilantro. Serve with couscous or rice.
