- Preheat the oven to 190 °C (375 °F).
- In an ovenproof skillet, brown the pork in the butter. Add the onions and cook for 1 minute. Add the curry, mango and cream. Season with salt and pepper. Bring to a boil. Bake in the oven for about 18 minutes for medium-rare.
- Serve with basmati rice and the vegetable of your choice.
I always have pork tenderloins and skinless, boneless chicken breast halves in the freezer.
