Shortbread Dough

  1. With the rack in the middle position, preheat the oven to 200 °C (400 °F).
  2. In a bowl, combine the flour and salt. Set aside.
  3. In another bowl, cream the butter with the sugar with an electric mixer. Add the egg yolks, one at a time, beating until smooth. With a wooden spoon, stir in the dry ingredients. The result will be grainy.
  4. With your fingertips, press the dough into a 23-cm (9-inch) round tart pan with a removable bottom. Bake for 10 to 12 minutes, until lightly browned. Let cool.
