For even fluffier pancakes, mixt the flour and baking powder in a small bowl. In another bowl, beat the eggs with the sugar and vanilla with an electric mixer until the mixture triples in volume, about 5 minutes. With the machine running on low speed, add the milk alternating with the dry ingredients and mix until smooth. Let the batter rest for 10 minutes at room temperature.
