1/2 cup (125 ml) warm water
1/2 teaspoon (2.5 ml) maple syrup
1 1/4 cups (310 ml) unbleached all-purpose flour
1 teaspoon (5 ml)
instant dry yeast
1 teaspoon (5 ml) salt
Topping
1/4 cup (60 ml) toasted sesame seeds
Freshly ground pepper, to taste
1/4 cup (60 ml) olive oil
2 tablespoons (30 ml) maple syrup

Preparation
Dough
In a bowl, combine the water and maple syrup. Set aside.
In a large bowl with a wooden spoon, combine the flour, yeast, and salt. Add the water mixture and combine into a soft ball. Knead the dough for about 3 minutes on a floured surface.
Place the dough in a clean and lightly oiled bowl. Flip the dough to coat with the oil. Cover the bowl with a damp cloth and leave in a warm and moist place for about 1 hour or until the dough has doubled in volume.
Topping
On a work surface sprinkled with sesame seeds, roll half of the dough at a time into a 20-cm (8-inch) disk, taking care to coat with sesame seeds. Sprinkle pepper on each side of the dough and press lightly for it to adhere.
In a non-stick skillet over medium heat, brown 1 bread at a time in half the oil for about 2 minutes on each side. Add 15 ml (1 tablespoon) of maple syrup and caramelize the nicest side of the bread. Flip the bread on a cutting board. Cut in half and then cut into 1.5-cm (½-inch) strips. Sprinkle with salt. Clean the pan before cooking the second bread. Serve with a glass of cider or beer.
