Open-Faced Grilled Cheese Sandwich

  1. With the rack in the highest position, preheat the oven’s broiler.
  2. In a skillet, soften garlic in half the oil. Add spinach and cook, stirring, until just wilted. Season with salt and pepper. Press into a sieve to drain well.
  3. Place bread slices on a baking sheet and brush with remaining oil. Turn slices of bread and spread with mascarpone. Layer with spinach mixture and sausages. Cover with cheese.
  4. Broil for about 5 minutes or until cheese is melted and bread begins to toast.
