Ingredients: 1 zucchini, cut into 1/4-inch (1/2-cm) dice; 1 shallot, finely chopped; 2 tablespoons (30 ml) olive oil; 1 tablespoon (15 ml) chopped fresh basil; 1 baguette, cut into 1/2-inch (1-cm) slices; 1/2 cup (125 ml) store-bought hummus; 1/4 lb (115 g) feta cheese, crumbled; Salt and pepper

Ingredients

- 1 zucchini, cut into 1/4-inch (1/2-cm) dice
- 1 shallot, finely chopped
- 2 tablespoons (30 ml) olive oil
- 1 tablespoon (15 ml) chopped fresh basil
- 1 baguette, cut into 1/2-inch (1-cm) slices
- 1/2 cup (125 ml) store-bought hummus
- 1/4 lb (115 g) feta cheese, crumbled
- Salt and pepper

Preparation

- In a skillet, gently soften zucchini and shallot in oil, without browning. Add basil. Season with salt and pepper. Set aside in a bowl.
- With the rack in the highest position, preheat the oven’s broiler.
- Place bread slices on a baking sheet. Oil lightly. Broil on each side.
- Just before serving, spread hummus on the toasted bread and cover with zucchini mixture. Sprinkle with feta cheese.
