- In a skillet, gently soften zucchini and shallot in oil, without browning. Add basil. Season with salt and pepper. Set aside in a bowl.
- With the rack in the highest position, preheat the oven’s broiler.
- Place bread slices on a baking sheet. Oil lightly. Broil on each side.
- Just before serving, spread hummus on the toasted bread and cover with zucchini mixture. Sprinkle with feta cheese.
