SAUCE
1/2 cup (125 ml) pineapple juice
1/4 cup (60 ml) rice vinegar
1/4 cup (60 ml) hoisin sauce
STIR-FRY
2 tablespoons (30 ml) peanut oil
1 pork tenderloin (454 g/1 lb), cut into thin strips
2 star anise pods
1 tablespoon (15 ml) finely chopped fresh ginger
2 cloves garlic, finely chopped
3 cups (750 ml) snow peas, trimmed
1 red or orange bell pepper, cut into thin strips
1 cup (250 ml) pineapple cut into sticks
Preparation
SAUCE
In a bowl, combine all the ingredients. Set aside.
STIR-FRY
In a wok over high heat, heat the oil. Add the pork and stir-fry until no longer pink. Add the star anise, ginger, garlic and stir-fry 2 minutes more. Season with salt and pepper. Transfer to a plate.
In the same wok, bring the sauce to a boil and reduce until syrupy. Add the vegetables and pineapple and cook until tender-crisp, 2 to 3 minutes. Return the pork to the wok and reheat while stirring. Adjust the seasoning. Remove and discard the star anise pods.
Serve on jasmine rice.
