Preparation
- Pour 2 tbsp (30 ml) of the orange juice in a large bowl. Set aside.
- In a small saucepan, bring the remaining juice to a boil. Remove from the heat and add the couscous. Cover and let rest for 5 minutes. Fluff the couscous with a fork. Let cool while preparing the strawberries.
- On a work surface, cut the strawberries into small dice (see note). Place in the bowl with the orange juice and toss well. Add the cooled couscous, yogurt and maple syrup and stir well. Spoon into small bowls and serve.
Note
You can replace the strawberries with any fresh fruit of your choice. Do not hesitate to change the juice for any of your favourites (white grape or apple). You can also add toppings; couscous is delicious garnished with granola or nuts.
To speed up the cooling, you can place the couscous in the refrigerator.
