Sauce

  1. In a bowl, dissolve the cornstarch in the water. Set aside.
  2. In a saucepan, combine the sugar and vinegar. Bring to a boil. Cook until the sugar is golden brown. Add the remaining ingredients. Bring to a boil and simmer gently for 5 minutes.
  3. Add the cornstarch and cook for 2 minutes, whisking constantly. Keep warm.

Tempura

  1. Preheat the oil in the deep fryer to high. Preheat the oven to 100 °C (200 °F). Line a baking sheet with paper towels.
  2. In a bowl, combine all the dry ingredients and add the liquids, whisking constantly. Add the meat and coat with the batter.
  3. For each fritter, use about 45 ml (3 tablespoons) of batter. Fry the fritters about 5 at a time for 4 to 5 minutes, until golden brown.
  4. Drain the fritters on the baking sheet and set aside in the oven.
  5. Just before serving, add the fritters to the sauce. Bring to a boil. Sprinkle with sesame seeds. Serve with the Asian Vegetables Salad.

Note

You can find the tapioca starch in Asian grocery stores and in the bulk aisles of specialty stores. When it thickens, it becomes perfectly translucent and shiny to enhances the color of the food. Cornstarch, is less translucent and becomes slightly milky when it thickens.
