Ingredients: 1/3 cup (75 ml) frozen raspberries; 1 tsp sugar; 3 tbsp unbleached all-purpose flour; 4 tsp brown sugar, packed; ¼ tsp baking powder; 1 small pinch salt; 1 tbsp butter, softened; 2 tbsp (30 ml) milk; ¼ tsp (1 ml) vanilla

Ingredients

- 1/3 cup (75 ml) frozen raspberries
- 1 tsp sugar
- 3 tbsp unbleached all-purpose flour
- 4 tsp brown sugar, packed
- ¼ tsp baking powder
- 1 small pinch salt
- 1 tbsp butter, softened
- 2 tbsp (30 ml) milk
- ¼ tsp (1 ml) vanilla

Preparation

- In a 1-cup (250 ml) mug, combine the raspberries and sugar. Set aside.
- In a bowl, combine the flour, brown sugar, baking powder, salt and butter with a fork until it forms a ball.
- Add the milk and vanilla and mix with a spatula until smooth.
- Spoon the mixture over the raspberries. Cook in the microwave oven for about 1 minute or until a toothpick inserted in the centre of the cake comes out clean. Let sit for 5 minutes to allow the cake to finish baking.
