- In a bowl, whisk together all the ingredients. Season with salt and pepper. Set aside.
- With the rack in the highest position, preheat the broiler.
- Place 1/4 of the cheese on each bread slice. Place the slices on a baking sheet. Broil until the cheese melts and the edges of the bread are toasted, 2 to 3 minutes.
- In a bowl, toss the lettuce and pear slices with the dressing. Divide the salad among four plates. Top each salad with a blue cheese toast.
