  1. Place the ricotta in a bowl and soften with a spatula. Season with salt and pepper and drizzle with olive oil.

Note

Ricotta is a great base for a variety of tasty spreads. Try stirring in chopped fresh herbs, ground fennel seeds, chopped sun-dried tomatoes or lemon zest, and season to taste.
