Quick Watermelon Sorbet

  1. In a food processor, coarsely chop the watermelon. Use a spatula to scrape down the sides of the processor as needed. Add the egg white, sugar and cinnamon and mix until smooth. Serve immediately.


Watermelon will keep longer when stored in bigger chunks, with the rind intact. Instead of cutting it into pieces, just wrap the remainder in plastic before putting it in the fridge.
