Citrus- and Cilantro-Infused Vodka

“The idea for this infusion came from wanting to give a second life to all the limes we juiced for our key lime pie recipe before they hit the compost bin. So why not punch up neutral vodka with a little bit of citrus and cilantro essence?” — Étienne Marquis, chef



  1. In a 2-cup (500 ml) glass jar with a tight-fitting lid, combine the vodka and the sugar until the sugar has completely dissolved.
  2. Add the pressed lime and lemon halves, as well as the pieces of cilantro stems. Seal the jar. Shake well and refrigerate for 24 hours.
  3. Strain the vodka. Serve the flavoured vodka over ice or add it to one of your favourite cocktails.


You can infuse your vodka with one ingredient at a time as it becomes available. Simply strain the vodka before each new addition.
