Fennel and Green Apple Salad

  1. In a large bowl, combine the olive oil, vinegar and maple syrup. Season with salt and pepper.
  2. Add the fennel and green apple to the bowl of dressing and mix well. Add the pea shoots. Adjust the seasoning. Delicious served alongside our edamame and cilantro veggie pâté.
