To prepare in advance
- In a container or resealable bag, combine the flour, baking powder and salt.
To cook on-site
- When ready to make the pancakes, in a bowl, mash the banana with a fork. Add the oat beverage and dry ingredients. Mix until smooth.
- Place a skillet over medium heat. Once the skillet is hot, lightly brush with butter. Cook two pancakes at a time, using about ¼ cup (60 ml) of the batter for each one. Use the back of a spoon to spread out the batter slightly. Cook for 2 minutes on each side or until nicely golden. Serve with honey or maple syrup and banana slices, if desired.
For backcountry camping without a cooler, use an individual serving of oat beverage.
