Radicchio Syrup
- In a small pot, bring the water and sugar to a boil. Remove from the heat. Add the radicchio, rosemary and lemon juice. Let sit for 20 minutes. Strain the syrup and let cool. Compost the radicchio and rosemary. Refrigerate the syrup.
Mocktail
- In a tall glass, combine the non-alcoholic gin, chilled radicchio syrup and lemon juice. Mix. Add a few ice cubes and top off with tonic water. Garnish with long wedges of radicchio leaves, if desired.
Note
You will have enough radicchio syrup to prepare 6 mocktails. The syrup will keep for 1 week in an airtight container in the refrigerator.
