The fresh mangos can be replaced with 4 cups (560 g) frozen mango cubes, partially thawed and diced.

Make sure the chocolate is warm when you add it to the butter mixture. If it’s too hot, the icing might not form stiff peaks when you whisk it.

If the icing seems too soft when it’s time to spread it on the cake, refrigerate it for a few minutes and then whisk it to regain firm peaks.
