These sandwiches are like a giant piece of sushi with the addition of katsu-style tofu. Cut into thick slices, the tofu is coated in a mixture of panko and sesame seeds, then browned in a skillet. Along with rice, spinach, cucumber and avocado slices, the tofu is wrapped in a nori sheet and covered with plastic wrap to hold everything in place as needed.

You can also use a rice cooker to cook the rice according to the manufacturer’s instructions.

Have a bowl of water close at hand when assembling the sandwiches. It will allow you to wet your hands when shaping the rice and to moisten the nori sheets.

You can cover the sandwiches in plastic wrap and refrigerate for 24 hours. Perfect for lunches!
