1/2 cup (125 ml) 2% plain Greek yogurt (see note)
3 tbsp (45 ml) lime juice
1 small ripe avocado, cut into pieces
1 green onion, cut into pieces
1 cup (25 g) arugula
1/4 cup (10 g) basil leaves
2 tbsp mint leaves
Preparation
In a blender, purée all of the ingredients until very smooth. Add water, 1 tbsp (15 ml) at a time, as needed. Season with salt and pepper. The dressing will keep for 3 days in an airtight container in the refrigerator.
