1. What has been your path?
Since obtaining my vocational diploma in cooking, I’ve had various experiences within the restaurant business: golf club, haute cuisine, and even a private chef for a family. I even participated in the 11th season of the French-language food competition series Les Chefs!, where I met Isabelle. Since I first started as Head Chef at Café RICARDO in St. Lambert, I’ve moved up to become in charge of recipe development.
2. What is your cooking specialty?
I enjoy the artistic side of cooking. Plating, as well as colours that work in harmony. It’s like painting a tableau!
3. Where does your passion for cooking come from?
After high school, I worked at the coffee shop of a fast food restaurant. I loved the adrenaline rush it gave me, as well as enjoying cooking. In school, I also had the chance to be taught by educators who passed down their passion.
4. What’s the recipe you’re most proud of?
A zucchini and halloumi dish on the Café RICARDO menu. I found a way to make this dish not only delicious, but also very pretty, despite its simplicity.
5. Which recipe had been tested the most prior to being published?
An onion tarte tatin starter. I had to work the puff pastry dough until it was perfect. The process was long! When we finally got it done, I was very happy with the result.
6. What is your favourite type of cuisine?
I love anything that has to do with Asian cuisine. I travelled to Vietnam and it added fuel to the flame.
