You can dry cranberries even if you don’t have a food dehydrator, though they will spend a very long time in the oven. Here’s how to do it: In a saucepan, bring to a boil 375 ml (1 1/2 cups) of sugar and 125 ml (1/2 cup) of water. With the rack in the middle position, preheat the oven to 75°C (170°F). Line a cookie sheet with parchment paper. Place 1 litre (4 cups) of thawed frozen cranberries in a bowl and pour the hot syrup over them. Let cool nearly to room temperature then drain. Place the cranberries on the cookie sheet and dry in the oven for 7 to 8 hours. Remove from the oven and let cool.
