Thanksgiving Menu for a Small Group

This year, with many Canadian cities imposing stricter guidelines due to COVID-19’s second wave, a large Thanksgiving family dinner likely isn’t in the cards. Thankfully, we’ve got a small but tasty menu to enjoy with those living with you in the same home. Eating together has never been more important, be it physically or virtually. Get the oven ready, and let the festivities begin...albeit differently!

STARTER

Apple Cheddar Tart

This thin, flaky tart made with apples freshly picked from the orchard is perfect to kick-start your meal. If you are less than six people at home, no problem; leftovers taste just as good cold the next day!

MAIN DISHES

Mustard-Rubbed Roasted Turkey Breast

Turkey breast halves are the perfect solution when you aren’t hosting a large group and are only four people at home. It’s the ideal format to avoid having leftovers for days!

Tofu, Ricotta and Spinach Stuffed Squash

We’re celebrating squash season with this recipe that’s easily divided, depending on the number of people at home. For example, instead of using three squashes, use only one or two and then adjust the stuffing amount. This vegetarian dish has always been a hit at Café RICARDO, and that’s all the more reason to make it at home this year!

DESSERT

Carrot Cake

Here’s a dessert that can be frozen and even cooked in muffin tins for smaller quantities! Use local carrots in this fall cake for an even sweeter taste.
